carrot cookies with icing

¾ cup shortening
1 scant cup sugar
1 tsp baking powder
1 cup chopped nuts
1 cup cooked carrots (mashed)
1 egg
1 tsp vanilla
1 cups flour
½ tsp salt
(1/2 cup coconut may be added)

Cream shortening and sugar. Add eggs and mix well. Add all ingredients but nuts. Beat well. Add nuts. Drop by teaspoonful on greased baking sheet. Bake at 350 degrees or until light brown. Ice while hot with the following:

Icing
Grated rind of 1 orange
1 cup powdered sugar
5 TBS orange juice
Pinch salt

Beat all ingredients together and spread on hot cookies. If too thick, thin with milk.
