danish ebleskivers (yeast)

1 pkg active yeast
1 cup lukewarm water
1 TBS sugar
2 eggs, separated
1 TBS melted butter
½ tsp salt
1 cup flour
Granulated or powdered sugar
Additional butter

Dissolve yeast in lukewarm water with 1 tablespoon of sugar. Beat egg yolks. Add melted butter and salt. Stir in flour and yeast mixture. Finally fold in well-beaten egg whites. Allow batter to rise until double in bulk, about 30 minutes.

Heat ebleskiver pan. Butter each depression lightly. With spoon, half fill depressions. When bottom has browned lightly, turn ebleskivers with fork and brown other side. Dust with granulated or powdered sugar.

If desired, small amount of applesauce or jam or pieces of fruit such as banana may be dropped into batter when it is put into pan. When dough rises and cooks, jam will be in center of ebleskiver.
