Beat 8 egg whites, adding 1/2 tsp cream of tartar, 1/4 tsp salt when frothy. Continue beating until stiff. Fold in 1 c. sugar to egg whites. Add egg mixture, fold in 1 cup flour, 1 tsp lemon extract, 1/2 tsp vanilla. Bake 1 hour in slow 325 degree oven.
