cowboy cookies

My mom's (Norma Nelson's) recipe.  My brother Curt brought this recipe home from Cub Scouts. 

1 C shortening
1 C brown sugar
1/2 C granulated sugar
2 eggs
2 tsp vanilla
2 tsp cold water
2 C flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 C old fashioned Mother's oats (Quaker oats)
1 small package chocolate chips


Cream shortening and sugar, add eggs, vanilla and water. Add dry ingredients, then oats and chocolate chips.
Bake 350 degrees for 10 to 12 minutes.  They look real soft when baked enough.  They crispen up.  10 minutes is usually plenty of baking time.

whole wheat cookies

Warm until butter melts:
3/4 c. honey
1/4 c. butter

1 3/4 c. whole wheat flour
1 egg
1 tsp cinnamon & 1/8 tsp cloves
1 c. raisins, dates, coconut - nuts
1/2 tsp soda disolved in 2 tbs water

Add spices to warm honey and butter. Cool, add well beaten egg, flour & water.

butterscotch cookies

1 c butter
2 c. br. sugar
1 egg
1 c All Bran
3 c. flour
2 tsp baking powder


Cream butter, add sugar.  Add egg & All Bran.  Then flour & baking powder sifted together.

Snickerdoodles

Mix thoroughly:
1 cup soft shortening (part butter)
1 1/2 cups sugar
2 eggs

Sift together and stir in:
2 3/4 cups sifted flour
2 tsp cream of tartar
1 tsp soda
1/4 tsp salt

 Roll into balls the size of walnuts.  Roll in mixture of 2 Tbsp sugar + 2 tsp cinnamon.  Place 2" apart on ungreased baking sheet.  Bake until lightly browned but still soft.

Temp:  400 degrees
Time:  8-10 minutes
These cookies puff up at first and then flatten out.

crispy filled cookies

(good!)

1 3/4 cups sifted flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup soft shortening
1/2 cup brown sugar, packed
1/4 cup water
1 teasp. vanilla extract
1 cup mashed corn flakes or bran flakes

Sift flour, baking powder and salt.  Mix shortening and sugar until creamy; add flour mixture alternately with combined water & vanilla.  mix well.  Mix in cereal.  Refrigerate until easy to handle.

Roll dough to 1/8 inch thick on lightly floured board.  Cut with 3" cutter or glass.  Place on ungreased cookie sheet; place a dot of filling (jam, etc.) on the cookie.  Fold at the middle & join 2 edges by forking.  Bake at 425 degrees for 10 minutes.

banana oatmeal cookies

¾ cup shortening
1 cup sugar
1 egg
1 cup mashed bananas
1 ¾ cup oatmeal, quick
½ cup nuts
½ cup raisins
1 ½ cup flour
½ tsp soda
½ tsp salt
¼ tsp nutmeg
½ tsp cinnamon

sand tarts

½ cup butter
1 cup sugar
1 egg
1 ¾ cup flour
1 tsp baking powder

White one egg

1 TBS sugar
¼ tsp cinnamon

Cream butter add sugar gradually and egg well beaten. Then add flour, mixed and sifted with baking powder. Chill. Toss ½ mixture on a floured board and roll 1/8” thick. Shape with a cutter. Brush over with white of one egg and sprinkle with sugar mixed with cinnamon.
Bake 8 minutes in slow oven.

-best I’ve ever tried-
Temp: 350 degrees for 5/10 minutes
Sift:
1 cup sugar
Beat until soft
½ cup butter
Add the sugar gradually. Blend these ingredients until creamy. Beat in:
One (1) egg
Combine:
1 tsp vanilla
1/3 cup sour cream
Sift before measuring
2 cups all purpose flour
Resift with:
1/3 tsp soda
½ tsp salt
1 tsp baking powder
Add the flour to butter mixture in 3 parts alternately with thirds of the cream. Beat completely after each addition. Chill dough for 12 hours. Roll on lightly floured board. Cut into shapes and place on greased sheet.

pecan crispies

great!
½ cup shortening
½ cup butter or margarine
2 ½ cup brown sugar
2 well-beaten eggs
1 ½ cups sifted enriched flour
½ tsp baking soda
¼ tsp salt
1 cup chopped pecans

Thoroughly cream shortening, butter, and sugar; add eggs; beat well. Sift dry ingredients; add to creamed mixture; add nuts.
Drop onto greased cookie sheet.
Bake in moderate oven – 12-15 minutes in 350 degree oven.
Yield: 5 dozen

black walnut cookies

¾ cup shortening
2 cups brown sugar
2 eggs
1 cup nuts
1 tsp vanilla
3 cups flour
½ tsp salt
½ tsp soda
1/3 cup sego milk

cookies

1 cup butter
2/3 cup sugar
3 egg yolks
2 ½ cups flour
Cream butter. Add sugar gradually. Cream well. Add egg yolks one at a time. Add flour to mixture. Chill in icebox. Cinn Candies.

peanut butter cookies

1 cup shortening
1 cup peanut butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
2 ½ cup flour
1 tsp baking powder
1 ½ tsp soda
½ tsp salt

christmas cookies

1 cup sugar
½ cup soft butter
1 egg
½ cup oil
1 tsp vanilla
2 cups flour plus 1 TBS flour
½ tsp cream of tartar
½ tsp soda
¼ tsp salt
Drop by teaspoon full on greased cookie sheet. Dip small glass in water, then colored Christmas sugar then press on cookies. Bake 375 degree oven.

almond bar

1 cup margarine
2 TBS sugar
1 tsp almond flavoring
Blend above ingredients – mix well
Add
2 ½ cups flour
Roll into long strips – cut in 2” pieces – roll in sugar. Bake 350 degrees 12-15 minutes.

overnite cookies

2 cups brown sugar
1 cup shortening
1 tsp soda
4 eggs
1 tsp cream of tartar
1 ½ cup nut meats
1 ½ tsp vanilla
1 cup coconut
Flour
Cream sugar and shortening. Add well beaten eggs, vanilla. Add a little flour with cream of tartar and soda sifted in. Add nuts, then enough flour to make mixture stiff enough to roll. Place in icebox overnite. Slice 1/3” thick and bake in hot oven.

toffee cookie squares

Makes 3 dozen bars
½ cup butter or margarine
½ cup shortening
1 cup brown sugar, firmly packed
1 egg yolk, unbeaten
1 tsp vanilla
½ tsp salt
2 cups sifted flour
1 6oz package semi sweet chocolate chips
½ cup chopped nuts

Cream together butter, shortening, sugar and egg yolk. Stir in vanilla, salt and flour. Pat mixture into 15 ½ x 10 ½ x 1” pan. Bake slow in oven 325 degrees 15 to 20 minutes. Melt chocolate; spread over warm baked mixture. Sprinkle with chopped nuts. Cut into squares.

molasses crisps


¾ cup shortening
1 cup brown sugar
1 egg
¼ cup molasses
2 ¼ cups flour
2 tsp soda
¼ tsp salt
½ tsp cloves
1 tsp cinnamon
1 tsp ginger

Mix shortening, sugar, eggs and molasses. Measure flour and sift with other dry ingredients. Roll into 1 1/4” balls. Dip tops in sugar. Place sugared side up 3” apart on greased cookie sheet. Sprinkle top with water. Bake 10 to 12 minutes in 350 degree oven. Do not over bake.

chocolate drop cookies

¼ cup butter
½ cup shortening
¾ cup sugar
2 -1oz chocolate
1 ¾ cup flour
½ tsp soda
½ tsp salt
½ cup milk
1 egg
1 tsp vanilla
Nuts?

Cream shortening and butter, add sugar gradually. Beat well, add egg. Add melted chocolate.

carrot cookies with icing

¾ cup shortening
1 scant cup sugar
1 tsp baking powder
1 cup chopped nuts
1 cup cooked carrots (mashed)
1 egg
1 tsp vanilla
1 cups flour
½ tsp salt
(1/2 cup coconut may be added)

Cream shortening and sugar. Add eggs and mix well. Add all ingredients but nuts. Beat well. Add nuts. Drop by teaspoonful on greased baking sheet. Bake at 350 degrees or until light brown. Ice while hot with the following:

Icing
Grated rind of 1 orange
1 cup powdered sugar
5 TBS orange juice
Pinch salt

Beat all ingredients together and spread on hot cookies. If too thick, thin with milk.
