meringues

2 egg whites
3/4 c. sugar
1/4 c. br. sugar
1/2 tsp vanilla
pinch baking pd

Whip egg whites stiff.  Mix br & gran. sugar.  Add gradually to whites.  Last fold in B.pd. & vanilla.
Bake in 275 degree oven 1 hour.

pralines

2 cups white sugar
1 cup buttermilk
3/4 tsp soda
1 Tbs butter
1 tsp vanilla
1 cup pecans
pinch of salt

Cook everything but butter, nuts, & vanilla until soft ball stage.  Remove from heat and add butter and vanilla.  Beat until cream & thick.  Add pecans after a little beating.  When it starts to thicken drop by tablespoon on waxed paper.

fudge candy

4 cups sugar
1/2 lb butter
1 full can milk (large)
cook 8 minutes.  After reaching  boil pour over top of marshmallow whip.  Add 2 packages chocolate chips.  Beat with spoon - add nuts.  Line pan with wax paper.  Pour in.

divinity

(never fail!)

Place in saucepan over low heat:
4 cups sugar
1 cup light corn syrup
3/4 cup water

Stir until sugar is dissolved, cook without stirring to 225 degrees (hard ball stage).  Remove from heat and pour, beating constantly, in a fine stream into:
3 egg whites, stiffly beaten

Continue beating until mixture holds it's shape and loses it's gloss.  Add:
1 teaspoon vanilla
1 cup broken nuts

Drop quickly from tip of spoon onto waxed paper in individual peaks.

old fashioned fudge

Combine in saucepan:
2 cups sugar
2/3 cups milk
2 squares unsweetened chocolate or 1/3 cup cocoa
2 TBS light corn syrup
¼ tsp salt
Stir over low heat until chocolate melts and sugar dissolves. Cook to 234 (soft ball). Stir occasionally. Remove from heat.
Add:
2 TBS butter
Cool to lukewarm without stirring.
Add:
1 tsp vanilla
Beat until thick and no longer glossy.
Quickly stir in:
½ cup nuts
Turn into buttered pan. Cut when set.

fudge

2 Hershey bars
1 package Hershey chips
4 ½ cups sugar
1 can evaporated milk – large
1 tsp vanilla
1 jar marshmallow creme – large
1 pound of nuts

Break bars in a big pan, add chips and marshmallow crème. In another pan, mix sugar and milk. After sugar and milk boils, boil for 6 minutes. Add 2 TBS butter and a dash of salt. Then add bars crème and chips. Mix up good. Add nuts.

peanut butter chocolate balls

1 cup chunky peanut butter
½ square margarine
1 cup powdered sugar
1 cup rice krispies
Refrigerate until firm enough to roll into balls. Roll into balls of desired size. Refrigerate again until firm.
Dip in ½ lb Hershey chocolate
