
4 eggs
½ cup oil
½ cup applesauce
3 cups flour
½ tsp baking soda
1 cup buttermilk
1 cup coconut
2 cups sugar
2 tsp coconut flavoring
½ tsp baking powder
½ tsp salt
1 cup chopped nuts
Beat eggs. Add sugar, oil, applesauce and flavoring. Sift dry ingredients together, then add to egg and sugar mixture – mixing well. Stir in buttermilk. Fold in coconut and nuts. Spoon into greased and floured bread pans (2 regular size or 3 smaller size.) Bake at 350 for one hour.
Coconut Glaze
1 cup sugar
2 TBS butter
1/3 cup water
1 tsp coconut flavoring
Combine sugar, water and butter; bring to a boil. Take off heat and stir in flavoring. Pour hot glaze over the tops of loaves while they are still warm in the pan. Let sit in pans for four hours before removing.
